Rice bubble bar

I found a recipe that looked good but then changed it to be a fit for my parameters:

2. Ingredients most families use

3. Nutrient dense

It has the texture of a chewy muesli bar (holds together super well) but also crunch from the rice bubbles.

Simple, no-bake, flexible, not chocolate flavoured!

You could also use as a breakfast bar and spread with jam, honey or peanut butter.

Recipe – Rice bubble bar

100 gm dates
¼ cup peanut or other nut butter
½ tsp vanilla
½ tbs honey (I omitted this, and the bar was not sweet despite the dates)
¼ tbs cocoa powder
¼ tbs LSA (or any ground nuts/seeds – I used ground linseeds)
1/3 cup rice bubbles (would work with other cereals)

Method

Soften dates in the microwave
Blend dates, nut butter, vanilla, honey, cocoa powder and LSA into a paste
Stir through the rice bubbles
Press into a greased baking dish
Allow to chill in the fridge
Cut into bars
