
Cinnamon swirl muffins
If you love cinnamon, you’ll like these.
Super simple to make
You can add frosting/icing if you’d like too
Recipe – Cinnamon swirl muffins
(Makes 4 large muffins)
Muffin
1/8 cup melted butter
½ cup milk
1 egg
½ tsp vanilla
1 cup flour (I used wholemeal)
1/8 cup + 1 tsp sugar (add more to taste)
2 tsp baking powder
¼ tsp salt
Swirl
1/8 cup melted butter
1 hpd tsp sugar
1 hpd tsp cinnamon
Method
Heat oven to 175°
Make filling – mix together butter, sugar, cinnamon
Whisk together wet ingredients for muffin
Gently stir through dry ingredients (don’t overmix)
Fill muffin case halfway with batter
Pour 1 tsp of filling on top of batter
Fill the muffin case with more batter
Pour ¼ of the remaining filling on the top of each muffin
Use a skewer to give the batter in the tin a quick swirl
Bake for 17 minutes or until skewer come out clean
