Nutrient-dense chocolate cake

Veg included but you wouldn’t know it

Could even be for breakfast!

Super quick and simple to make

Recipe – Nutrient-dense chocolate cake

½ cup of mashed sweet potato (kumara) – see method
2 eggs (medium)
½ tsp vanilla
¼ cup light tasting oil (I used olive)
1/8 cup + 1 tsp honey (melted)
½ cup flour (I used wholemeal)
¾ tsp baking powder
¼ cup cocoa
Pinch salt
1/8 tsp baking soda
¼ cup of chopped dates (or substitute for other dried fruit or 1 dst spoon extra honey)

Method

Heat oven to 180°

Grate sweet potato and steam or microwave to soften
Add sweet potato, eggs, vanilla, oil and honey to the food processor and blitz
Stir dry ingredients into the wet ingredients
Pour into a greased baking dish/tin
Bake 18 mins (until the top is just cooked and centre still a little gooey)
Allow to cool for 10 mins in the pan
It’s got a very light texture. Cross between a mousse and a cake (it gets a little denser second day)
