
Cookie dough pie (oh my!)
OMG so delicious.
My teen wandered in when I was making it, dipped his finger in the mixture and said “nice, but I bet this is the best it’s going to get”.
WRONG, oh how wrong he was.
I could have eaten the whole thing in a sitting 😉
Super simple to make plus it’s full of beans!
Recipe – Cookie dough pie *
1 can cannellini beans
½ cup quick oats (I used oat flour) or almond flour for GF
1/8 cup yoghurt (use applesauce for DF)
1 ½ Tbs oil (I used light olive)
1 tsp vanilla
1 tsp baking powder
¼ tsp baking soda
¼ tsp salt
1/3 cup sugar (I used coconut sugar) – for a sweet pie, increase sugar
½ cup choc chips (I used a chocolate bar – see notes below)
Method
Heat oven to 175°
Rinse beans thoroughly then add all the ingredients except the choc chips into the food processor and blend well.
Add the choc chips and stir through (Note: chocolate has become very expensive and I’m also not a fan of choc chips that are compound chocolate. Instead, it’s much more cost effective (and better ingredients) if you buy a reasonable quality bar of regular chocolate (I used Cadbury Dark) and throw 4 squares in the food processor until it’s chopped into chunks).
Pour mixture into a well-greased baking dish or tin.
Sprinkle more choc chips on top (optional)
Bake for 35 mins.
Let cool for 10 minutes before removing from the tin.
Serve hot or cold.
