No bake choc cookies

So simple but packed with nutrient-dense ingredients.

Dare I say could even be breakfast fare!

Lend themselves well to icing or just a spread on top too.

Recipe – No bake choc cookies

¼ cup nut butter (I used peanut)
1 tsp honey/maple syrup (use more to taste)
1/8 cup butter/coconut oil
1 Tbs cocoa powder
1/8 tsp salt
½ tsp vanilla
½ cup oats (quick cook or pulse rolled or wholegrain in the food processor)
1 tsp ground linseeds or LSA (optional)
1 tsp desiccated coconut (optional)

Method

Melt nut butter, honey and butter (I used the microwave)
Add to the rest of the ingredients in a mixing bowl
Combine well
Form into ‘cookies’ on a silicon sheet or baking paper (they may stick otherwise)
Cool in the fridge/freezer to harden
Great, simple snack
