Kitchen sink cookies

So named as they do have quite a few ingredients!

Fortunately, they are ones most people have in the pantry

The cookies are chock full of nutrients

Great protein boost along with delicious taste and simple to make.

Recipe – Kitchen sink cookies

½ cup flour (I used wholemeal)
1tsp baking powder
1 tsp baking soda
1 tsp cinnamon powder
1/3 tsp salt
1/6 cup cottage cheese (could sub for nut butter)
¼ cup sugar (I used coconut sugar)
1 small egg
1 Tbs butter (softened)
1 tsp vanilla
½ cup choc chips (see note below *)
½ cup oats (I used wholegrain but placed in the food processor to break up first)
1/3 cup walnuts (see note below **) – optional or could sub for other nuts
1/3 cup desiccated coconut

Method

Heat oven to 175°
Beat cottage cheese, butter, egg and vanilla
Stir in the rest of the ingredients (don’t overmix)
Spoon mixture onto a silicon sheet or baking paper covered tray
Bake approx. 12 mins
Cool on tray

*I used Whittakers 70% chocolate & pulsed in the food processor to break into chips (cheaper and with a better nutrient profile than choc chips)

**My son doesn’t like walnuts, but I ground these first and they were not noticeable in the finished product but are full of great nutrients
