Orange cake

This ticks a lot of boxes for me:
– It’s super simple

– It uses staple pantry ingredients

– It contains fruit

– The texture is great

– For non-fruit eaters it doesn’t seem like a cake that contains fruit

My teen declared it one of the best things I’ve ever baked – gasp!

Admittedly, I’m not renowned for my baking, but still!

Recipe – Orange cake *

1 whole orange (I used a smallish one)
½ tsp baking powder
¼ cup water
62.5 gms butter (softened)
1/3 cup sugar (more to taste) – I used coconut sugar
1 egg
¾ tsp vanilla
I cup flour – I used wholemeal
½ cup raisin/sultanas/craisins/dates (optional – but does add extra sweetness so if omitting add extra sugar)

Method

Heat oven to fan forced 160°
Roughly chop the whole orange (including skin) and food process
Dissolve the baking soda in the water and add to the orange
Add butter, sugar, egg, vanilla and flour and blend in the food processor
Stir through dried fruit, if using
Pour into a greased baking dish (I lined with greaseproof paper)
Bake for approx. 55 mins or until browning on top and skewer comes out clean
Delicious for snack, dessert or even breakfast!
For extra decadence and calories add icing or whipped cream
