Strawberry baked bars

Wow, these were delicious.

Simple to make and a lovely, sweet treat without needing a lot of sugar

You could also swap the main fruit (and I’m sure frozen would work)

Recipe – Strawberry baked bars

(For a test quantity)
½ cup oats (I used wholegrain but would be better with rolled)
1/3 cup flour (I used wholemeal – easy fibre upgrade)
1 dst sp sugar (add more to taste) – I used coconut sugar
Pinch salt
3 Tbs melted butter
½ cup diced strawberries (can increase for thicker fruit layer)
½ tsp cornflour
½ dst sp lemon juice
½ dst sp sugar (I used coconut sugar)

Method

Heat oven to 175°
Combine oats, flour, 1st amount of sugar, salt and butter in a bowl
Mix well to combine and form a crumb
Press half the mixture into a well-greased or parchment lined bowl
Push down firmly so that it sticks together
Place strawberries on top in a layer
Sprinkle with cornflour
Sprinkle with lemon juice
Sprinkle with 2nd lot of sugar (add more to taste)
Press a second layer of the oat crumb on top
Bake in the oven for approx 35 minutes until browning on top
Leave to cool in the bowl before slicing
Serve as is or with yoghurt or ice cream
Perfect for lunchboxes too
