Choc chip loaf
It may look decadent, and it kind of is, but it’s also calorie and nutrient-dense.
Super simple to make and bound to be a crowd pleaser.
Recipe – Choc chop loaf *
¼ cup sugar (I used coconut) – for more sweetness add ¼ cup more
1 cup flour (I used wholemeal)
½ Tbs baking powder
¼ tsp salt
1 egg (small-medium)
½ cup milk
1/6 cup oil (I used light olive)
¾ cup choc chips (I blitzed part of a 70% bar in the food processor to make rough chunks **)
Method
Heat oven to 175°
Grease a baking tin/dish
Combine the dry ingredients and chocolate
Beat egg/milk/oil to combine
Fold dry ingredients into the wet just combining
Pour mixture into greased tin/dish
Bake for approx 30 mins (clean toothpick)
Leave to cool before slicing
Eat as is or add favourite spread or whipped cream

**Compound choc chips are expensive/do not have a great nutrient profile. Using regular chocolate is cheaper/better nutritionally (the higher the cocoa content the better)
