Pineapple cake

I love baking but it’s not something I will do when there are only two of us
(my teen leaves in 13 days)

Yesterday I decided to experiment, and it went super well.

Normal pantry items, quick and easy, chock full of fruit

Recipe

Recipe *
1 tin of pineapple (drained)
1tsp baking soda
½ cup water
125gm softened butter
1/3 cup brown sugar (the pineapple is super sweet but we also like low sugar so add more to taste)
2 eggs
1 tsp vanilla
2 cups flour (I used wholemeal)
1 cup raisins/sultanas or other dried fruit (optional)

Method
Heat oven to 160°
Grease a cake tin (I used a silicon one with baking paper inside)
Whizz the pineapple in the food processor to form a pulp
Dissolve the baking soda in the water
Add water/soda, butter, sugar, eggs, vanilla and flour
Combine
Add dried fruit and stir to combine
Pour into cake tin
Bake for approx. 50-55 minutes or until skewer comes out clean
