
Yoghurt brownie *
Super quick and simple one bowl recipe
The result is a very moist brownie. It’s fudgy but lighter than many brownies which makes it a little different feeling in the mouth.
Fairly low sugar and nutrient dense.
Easy for children to make.
Recipe Yoghurt brownie
¼ cup melted chocolate (I used dark Whittakers)
½ cup yoghurt
¾ tsp vanilla
1/5 – ¼ cup sugar (I used coconut)
1/3 cup + 1 dst sp flour (I used wholemeal)
¼ cup cocoa powder
¼ tsp baking soda
¼ cup milk (I used full fat)
½ cup choc chips/dried fruit – optional – (I used raisins)
Method
Heat oven to 180°
Melt the chocolate in a bowl
Allow to cool for a few minutes
Add yoghurt, vanilla and sugar
Mix until just combined
Add flour, cocoa power and milk and combine gently until fully integrated
Fold in choc chips or fruit if using
Pour into a greased baking dish
Bake for 20-25 mins until skewer comes out clean
Leave in tin for 10 mins
